Default numbers are an example, not industry data.

Formula

Line cost = bottle or pack price ÷ size × amount per drink; drink cost = sum of line costs + garnish. Pour cost % = drink cost ÷ menu price × 100; gross profit = menu price − drink cost; price at target = drink cost ÷ (target/100).

How it works

Use matching units for bottle size and amount used. The ml/oz selector relabels only; it does not convert values. 750 ml = 25.36 oz. Cost house-made ingredients from batch cost and usable batch yield.

Default numbers are illustrative. Use your own records and matching units throughout.

Worked example

1.92 + 0.45 + 0.18 + 0.03 + 0.15 garnish = 2.73 drink cost. At 12.00: pour cost 22.75%, gross profit 9.27. Price for a 20% target = 13.65.

Benchmark

A commonly cited rule of thumb for liquor pour cost is roughly 18–24%.
