How to use the recipe costing card template

  1. List each ingredient with what you pay (purchase cost and quantity) and how much the recipe uses, in the same unit.
  2. Add a yield % for trim and waste (e.g. 75% for romaine after trimming).
  3. Enter portions per batch, your target food cost % and menu price.
  4. The card returns batch cost, cost per portion, the price that hits your target and your actual food cost % at the current price.
